What is gluten?

Gluten, also known as gluten protein, is a mixture of proteins found in the seeds of many cereals. Due to its “sticky” properties, gluten is used in the food industry for processing flour. It makes flour in combination with water become a sticky dough and gives baked goods, such as bread, their shape and bite.

Gluten is found in wheat and other related grains such as:

  • Barley
  • Unripe spelt grain

  • Kamut

  • Bulgur
  • Couscous

Gluten can therefore be found in all foods containing the grains above. Typical foods containing gluten are flour, wheat starch, pasta, muesli, baked goods and much more.

Gluten-free nutrition

An intolerance can often be recognized by various symptoms. Patients often suffer from abdominal pain, headaches, diarrhea and in some cases even muscle and limb pain. If a gluten intolerance is suspected, a specialist should be consulted who can determine the type of intolerance through various blood tests.

Celiac disease

Celiac disease is the medical term for a severe gluten intolerance. It is a chronic inflammation of the small intestine, which subsequently leads to damage of the intestinal mucosa – especially in the duodenum.

Anyone suffering from celiac disease has to adhere to a strict gluten-free diet for the rest of his or her life. If a completely gluten-free diet is not followed, the intestinal villi may be destroyed, which can lead to serious sequelaes. But even if celiac disease requires a major change in your diet, a gluten-free diet with the right tips and tricks is not so difficult.

Wheat allergy

Although a wheat allergy is less dramatic than a celiac disease, all foods containing wheat should be avoided. In case of a wheat allergy, the body reacts allergic to wheat products and their proteins. The symptoms often appear on the skin or result in respiratory and digestive problems.

Wheat sensitivity

Wheat sensitivity is a non-allergic reaction of the body to wheat or gluten. The symptoms are similar to those of celiac disease or wheat allergy, but wheat or gluten do not have to be completely cut out of the diet. A slightly reduced wheat consumption can alleviate the symptoms.

  1. First, the seed is checked for being gluten-free and a suitable area is selected for cultivation. In addition, it is taken care of that no gluten-containing cereals were cultivated as a previous crop or that the areas were ploughed.
  2. As the plants grow, the field is checked several times to remove any gluten-containing grains that have “crept in”.
  3. During the harvest itself, it is important that the harvesters are cleaned very well beforehand.
  4. In order to avoid subsequent mixing at the transport routes, great attention is also paid to the storage of the harvested oats. In logistics, for example, it must be ensured that the gluten-free oats are only transported with well-cleaned hangers and that special boxes are used for storage. The boxes are removed from storage using a washed forklift truck which transports them onto a cleaned truck.
  5. The processing itself may only take place on a gluten-free system.
